Midwest summer heatwaves can be oppressive and even dangerous! High heat indexes and humidity levels cause the body to lose fluids rapidly, predisposing folks to temperature related illness. Beat the heat by focusing on continual hydration throughout the day. Waiting until you feel thirsty may mean you are already behind the 8 ball. This weekend is particularly toasty and inspired me to I create this refreshing treat to bring smiles and (stealth hydration) to our gardening + play team.

Casey Jayne and I started the morning with a jaunt to our farmers’ market and hit the jackpot with an abundance of juicy berries. Add refreshing fresh squeezed lime juice, quick acting natural energy from maple syrup, and avocado for healthy fats + longer acting energy to create a perfect pick me up! Find the freshest organic berries you can. The juicier the fruit, the sweeter your pops will be!

Berry Lime Avocado Popsicles

Beat the heat with this refreshing and nutritious treat!

Freezing time 4 hrs
Total Time 4 hrs 15 mins

Cuisine vegan

Equipment

  • popsicle molds

Ingredients
  

  • 4 limes
  • 6 fresh organic strawberries green tops removed
  • 3/4 c fresh organic blueberries
  • 1 avocado sliced
  • 1 c filtered water
  • 3 tbsp maple syrup

Instructions
 

  • Slice limes in half and hand squeeze the juice into a mixing bowl.
    Add 1 cup water and 3 Tbsp maple syrup to the lime juice and stir.
    Prepare 6 popsicle molds. In the tip of the mold place a clean rinsed strawberry. Next layer in blueberries and finally a slice or two of avocado.
    Fill the popsicle molds with the juice+ water+ maple syrup liquid.
    Place popsicle sticks into the mold and seal.
    Place in freezer for at least 4 hours, until solid.
    Remove from freezer and enjoy!
